After-school snacks can be hard to master, parents want them quick, easy, and a least a little bit healthy, and kids want something yummy! With these homemade crackers, we can find a happy middle ground. They’re shaped like friends and have a salty, cheesy taste that your kids are sure to enjoy. Whip up a batch on a relaxing Sunday, and you have little snacks that can fit perfectly into lunch boxes or hungry after-school tummies.

In a food processor, pulse the cheddar, Mirage Margarine, flour, and salt until the mixture becomes coarse and sandy. With the machine running in short pulses, drizzle in the cold water until the dough gathers and holds together. Turn out, press into a disc, wrap tightly, and refrigerate for at least 1 hour.
Preheat your oven to 375°F and line two baking sheets with parchment paper.
On a lightly floured surface, roll the dough to between about ⅛” and a ¼” thickness. A thinner dough will make crispier crackers, while a thicker dough will make softer, flakier crackers.
Use a goldfish cutter to cut the dough into small 1” goldfish shapes, re-rolling the scraps as needed to use up all the dough. Arrange the goldfish about a ½” apart on the prepared baking sheets, then cover with saran wrap and refrigerate for 30 minutes to firm and chill the margarine before baking.
Bake for about 12 minutes, or until the crackers are puffed and lightly golden, rotating the sheets halfway for even baking.
Cool the crackers completely on the baking sheets before storing them in an airtight container at room temperature for up to 1 week.
