Directions
Pumpkin Cake
Preheat your oven to 350°F, then grease and flour a 9 x 13 inch cake pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
In a large bowl, cream the Mirage Margarine with the brown sugar and granulated sugar on medium-high speed until light and fluffy, about 3 minutes.
Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract and pumpkin pie filling until fully incorporated.
Reduce the mixer speed to low and gradually add the dry ingredients, mixing just until combined. Spread the batter evenly into the prepared pan.
Bake for around 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan fully before frosting.
Frosting
In a large bowl using a stand mixer or handheld mixer, beat the cream cheese and Mirage Margarine on high speed until smooth and creamy.
Add the confectioners’ sugar, vanilla extract, salt, and pumpkin pie spice. Beat on low speed for 30 seconds, then increase to high speed and beat for 2 minutes until light and fluffy.
Frost the cooled cake, then refrigerate for 30 minutes before serving to help set the frosting and make slicing easier.
For a fun garnish, colour some of the frosting orange and green, and pipe out little pumpkins.
