Bake it 'til you make it

Ingredients

Crust

1/2 cup
Mirage Margarine (softened)
5 tbsp
cocoa powder
1/4 cup
white sugar
1
large egg, beaten
1 3/4 cup
graham cracker crumbs
1 1/2 cup
flaked coconut

Filling

1/2 cup
Mirage Margarine, softened
3 tbsp
heavy cream
2 tbsp
custard powder
2 cups
powdered sugar

Chocolate Topping

4 (1 oz) squares
semisweet baking chocolate
2 tsp
Mirage Margarine
1/2 tsp
flaky salt

Directions

Crust 

Set a heatproof bowl over a pot of gently simmering water. Add the Mirage Margarine, cocoa powder, and white sugar, and whisk until melted and smooth.

Whisk in the beaten egg and cook, stirring constantly, until the mixture thickens (about 2-3 minutes), then remove from the heat. 

Stir in the graham cracker crumbs and coconut. Press the mixture firmly into the bottom of a greased 9-inch springform pan to create a pie crust. Place in your fridge to chill while you prepare the filling. 

Filling 

In a bowl, beat the Mirage Margarine with the heavy cream and custard powder until light and fluffy, then add the confectioners’ sugar and continue mixing until smooth.

Spread the filling evenly over the chilled crust and refrigerate to set. 

Chocolate Topping 

Melt the semisweet chocolate and Mirage Margarine in a heatproof bowl over a pot of gently simmering water. Pour over the chilled filling and spread into an even layer.

Top with a sprinkle of flaky salt, then chill in the fridge until the chocolate is set.
