Ingredients

Chocolate Chip Skillet Cookie

1 1/2 cups
bread flour
2/3 cup
cake flour
1 tsp
baking soda
1/4 tsp
baking powder
1/2 tsp
salt
3/4 cups & 1 tsp
Mirage Margarine, divided
3/4 cup
dark brown sugar, packed
1/3 cup
granulated sugar
2 large
eggs
1 1/2 cups
chocolate chips, roughly chopped

Directions

Preheat oven to 350°F.

Lightly grease a 10 inch skillet with a teaspoon of Mirage Margarine and line with a round of parchment.

In a medium bowl, thoroughly whisk together the flours, baking soda, baking powder, and salt.

In a bowl of a stand-mixer using the paddle attachment (medium speed), or a large bowl using an electric mixer (medium-high speed), cream together the Mirage Margarine and sugars until well combined; about 2 minutes.

Add eggs, one at a time, mixing well before adding another. Add in the vanilla extract.

On low speed, add the dry ingredients to the margarine mixture, one third at a time. When adding the last third, add the roughly chopped chocolate chips. If it becomes too difficult to mix, switch to a wooden spoon or a rubber spatula to fold in the remaining ingredients.

Transfer the cookie dough into the prepared skillet and spread the dough evenly with a spatula.

Place skillet into the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown in colour and the middle is just set. Take out of the oven and allow to cool for about 5 minutes before cutting. Slice skillet cookie into wedges. Serve as is, or with a scoop of your favourite ice cream.

Baker’s Notes:

  • If time permits, you can chill the dough to allow the flavours to become more pronounced. Place the dough in the skillet and cover with plastic wrap before allowing to rest in the fridge overnight.
  • For more texture, substitute 1/2 cup of peanut for 1/2 cup of chopped chocolate.
  • If the skillet used is well seasoned, you may omit the parchment and just grease the skillet with Mirage Margarine.
