Preheat your oven to 350°F and line a 9”×9” baking pan with parchment paper.
In a small saucepan over medium heat, melt the Mirage Margarine until fully liquid and hot. Remove the pan from the heat and stir in the chopped dark chocolate until the mixture becomes smooth and fluid.
In a stand mixer fitted with the whisk attachment, combine the sugar, light brown sugar, salt, eggs, vanilla, and espresso powder. Whip everything on medium-high for about 10 minutes, or until light and fluffy.
Whisk together the flour and cocoa. With the mixer on low, stream in the warm chocolate-margarine mixture. Once incorporated, add the dry ingredients and mix until just combined, scraping the sides of the bowl periodically.
Pour into your prepared pan and bake until the top is glossy and just barely firm, or until a toothpick inserted halfway between the edge and the centre comes out with just a few crumbs attached, about 30 minutes.
Cool to room temperature, then loosen the sides with a knife and lift out with the parchment. Cut into 16 squares.
