These Peanut Butter Cookie Cups are easy to make and impossible to resist – kid-friendly enough that no child could say no, and tasty enough that even grown-ups are sure to come back for seconds. Peanut Butter Cookie Cups
Directions
Preheat your oven to 375°F.
In a small bowl, sift together the flour, baking soda, and salt, and set aside.
Using a stand mixer (or hand mixer) and a large bowl, cream the peanut butter, Mirage Margarine, granulated sugar, and brown sugar until light and fluffy, about 2 minutes. Beat in the egg, milk, and vanilla until smooth, scraping the sides of the bowl periodically. Add the dry ingredients and mix on low just until a soft dough forms. Be careful not to over-mix.
Scoop out and roll the dough into 36 roughly 1-2 tbsp balls, then place each ball into the cups of 2 mini muffin pans.
Bake for 8 minutes, until lightly golden and the outside is beginning to set, but be careful not to over-bake or you’ll have trouble with the next step.
Remove the pan from the oven and immediately press a mini peanut butter cup into the center of each cookie. Let the cookies cool completely in the pan before carefully removing.
