Blackberry Basil Goat Cheese Pizza

Skip delivery and go for homemade, starting with our recipe for a Blackberry Basil Goat Cheese Pizza. This combination is truly unique, and will have your family coming back for slice after slice of sweet (but not too sweet) blackberries and luscious goat cheese, we just know it!

Yield: 1 pizza (about 8 servings)

Ingredients

Goat Cheese Basil Spread
  • 5 oz / 150 ml package goat cheese
  • 30 ml / 1 tbsp Mirage margarine, melted
  • 2 g / 2 tsp dried basil
  • 2 g / 1/2 tsp black pepper, freshly ground
Quick Pizza Dough
  • cornmeal, for dusting
  • 700 g / 1 package frozen pizza dough, thawed overnight in the fridge
  • 30 ml / 2 tbsp Mirage margarine, melted
  • 20 whole blackberries, washed and dried
  • 15 ml / 1 tbsp honey
  • fresh basil leaves (small to medium in size), washed and dried

Directions

Goat Cheese Basil Spread

1. Preheat oven to 500°F (260°C). Line a baking sheet with parchment paper and dust with cornmeal. Meanwhile, make the goat cheese basil spread.

2. In a small bowl, using a rubber spatula, break up the goat cheese. Add the melted Mirage margarine, ground black pepper and dried basil. Fold mixture until well blended and smooth. Set aside.

Quick Pizza Dough

1. Place pizza dough out onto a lightly floured work surface.

2. Pat or roll dough out into an oval. Carefully place pizza dough onto the prepared baking sheet. Brush the dough with the the melted Mirage margarine. With a spoon, dot pizza with the goat cheese and basil spread, leaving about an inch (2.5 centimetres) around the perimeter (for the crust). Sprinkle with the blackberries. Place baking sheet into the preheated oven for 10 to 15 minutes, or until crust is golden in colour. Once out of the oven, drizzle pizza with honey and garnish with fresh basil leaves.

3. Allow pizza to cool on the pan for about 5 minutes before cutting and serving.

Chef Notes

  • Try this pizza using raspberries, strawberries, or even apricots, if blackberries are not available.
  • If you have a round pizza pan, feel free to use that and make the pizza into the traditional round shape.
  • Substitute the goat cheese with ricotta cheese, making sure to taste for saltiness. Add a small amount of salt (or a handful of grated parmesan cheese) if the ricotta cheese is a bit bland.
