Rustic Rhubarb Cobbler

Vibrant and tart, rhubarb is a Canadian springtime staple. Another staple? Cobbler! Combine the two together and we have the perfect seasonal dessert. Mirage Margarine’s take on the rhubarb cobbler is baked in just under an hour, and tastes bright, fresh, and perfectly sweet. This dessert is the best way to bid winter adieu – it’s made to be served on a sunny springtime day with a scoop of vanilla ice cream.

Bake it 'til you make it

Ingredients

Filling

3/4 cup
granulated sugar
2 tbsp
cornstarch
4 cups
rhubarb, chopped
1 tbsp
water
1 tbsp
Mirage Margarine

Topping

1 cup
all-purpose flour
3 tbsp
white sugar (divided)
1 1/2 tsp
baking powder
1/4 tsp
salt
1/4 cup
Mirage Margarine, cold
1/4 cup
milk
1
large egg

Directions

Preheat your oven to 400°F and lightly grease a 9” square baking dish and set aside. 

Filling 

In a large saucepan, whisk together the sugar and cornstarch. Add the rhubarb and water, stirring to coat evenly. Bring the mixture to a boil over medium heat and cook, stirring constantly, for 1 minute until slightly thickened.  

Remove from the heat, stir in the Mirage Margarine, then transfer the hot rhubarb mixture to the prepared baking dish. 

Topping 

In a medium bowl, sift together the flour, 1 tbsp. of the sugar, baking powder, and salt. Cut in the cold Mirage Margarine using a pastry blender until the mixture resembles coarse crumbs.

In a small bowl, whisk together the milk and egg. Add the liquid to the flour mixture and stir just until the batter comes together.  

Spoon the topping evenly over the rhubarb filling. Sprinkle the remaining 2 Tbsp. of sugar over the top. 

Baking 

Bake until the filling is bubbling and the topping is lightly golden and crisp, about 20 minutes. Let cool slightly before serving.
