Bake it 'til you make it

Ingredients

Banana Chocolate Chip Muffins

1 1/2 cups
all-purpose flour
1 tsp
baking soda
1/2 tsp
salt
2/3 cup
granulated sugar
3 medium (about 1 cup)
ripe bananas, mashed
1
egg
1/3 cup
Mirage Margarine, melted & slightly cooled
1 tsp
vanilla extract
1 cup
milk chocolate chips

Directions

Preheat your oven to 400°F and line a 12-cup muffin tin with paper liners. 

In a medium bowl, whisk together the flour, baking soda, salt, and sugar. Set aside. 

In a large bowl, mash the bananas until smooth. Add the egg, melted Mirage Margarine, and vanilla extract, then stir until fully combined. It’s important to ensure the margarine isn’t too warm, or the mixture will melt the chocolate chips in the next step. 

Add the dry ingredients to the banana mixture and gently mix with a spatula until just combined. Fold in the chocolate chips, mixing only until evenly distributed. 

Divide the batter evenly among the prepared muffin cups. Sprinkle additional chocolate chips over the tops, if desired. 

Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool briefly before serving.
