Unicorn Cakes
Preheat your oven to 350°F and position racks in the upper and lower thirds of the oven. Line two baking sheets with parchment paper.
In a large bowl, whisk the flour, baking powder, baking soda, and salt.
In a stand mixer fitted with a paddle, beat the Mirage Margarine and sugar on high until fully creamed and fluffy, about 5 minutes. Add the eggs and vanilla, then mix on medium-high until smooth, scraping the sides of the bowl periodically.
Slowly stream in the buttermilk, before increasing the mixer speed to medium-high and mixing until fluffy and white, about 5 minutes. Make sure your ingredients are all room temperature during this step, and take your time with the mixing to ensure everything properly emulsifies.
Add the dry ingredients and funfetti sprinkles, and mix on low just until incorporated. Do not overmix.
Drop 2 slightly heaping tablespoons of batter onto the prepared baking sheets, spacing each mound about 2-3” apart. Top the batter with more sprinkles.
Bake for about 15 minutes, rotating the pans halfway through baking, until the tops spring back lightly when touched and a toothpick inserted into the center comes out clean. Let the cakes cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Cream Cheese Frosting
In a mixing bowl, beat the cream cheese and Mirage Margarine until creamy, about 2 minutes.
Add the powdered sugar, vanilla, and salt. Mix on low for 30 seconds to bring everything together, then beat on high for about 2 minutes until smooth and fluffy.
Mix in 1-2 drops of food colouring to tint the frosting unicorn colours.
Assembly
Arrange half of the cooled cakes bottom side up on a work surface. Pipe the cream cheese filling onto each. Top with the remaining cakes to form sandwiches.
- For a fun multi-colour effect, split the frosting in half and colour each half separately. Place each coloured frosting in a different piping bag, then place both bags into a third empty bag so that the colours mix as you pipe out the frosting.
Serve immediately or refrigerate until ready to serve. Store assembled whoopie pies in an airtight container in the refrigerator.
