Peanut Butter Cookie Cups

Sometimes all we need is a little bit of peanut butter, chocolate, and a good cookie. Why not make them all-in-one? These Peanut Butter Cookie Cups are easy to make and impossible to resist – kid-friendly enough that no child could say no, and tasty enough that even grown-ups are sure to come back for seconds. These cookie cups are best enjoyed as a special after-school snack, dinnertime dessert, or even as a quick-and-easy treat served at your kid’s next birthday party. No matter how or when they’re enjoyed, the whole family is sure to love these soft, chocolatey bites of goodness.

Bake it 'til you make it

Ingredients

Peanut Butter Cookie Cups

1 cup
all-purpose flour
1 tsp
baking soda
1/8 tsp
salt
1/3 cup
creamy peanut butter
1/4 cup
Mirage Margarine, room temperature
1/4 cup
granulated sugar
1/4 cup
light brown sugar
1
egg, room temperature
2 tbsp
milt
1/2 tsp
vanilla extract
36
chocolate peanut butter cups, unwrapped and frozen

Directions

Preheat your oven to 375°F. 

In a small bowl, sift together the flour, baking soda, and salt, and set aside. 

Using a stand mixer (or hand mixer) and a large bowl, cream the peanut butter, Mirage Margarine, granulated sugar, and brown sugar until light and fluffy, about 2 minutes. Beat in the egg, milk, and vanilla until smooth, scraping the sides of the bowl periodically. Add the dry ingredients and mix on low just until a soft dough forms. Be careful not to over-mix. 

Scoop out and roll the dough into 36 roughly 1-2 tbsp balls, then place each ball into the cups of 2 mini muffin pans.  

Bake for 8 minutes, until lightly golden and the outside is beginning to set, but be careful not to over-bake or you’ll have trouble with the next step. 

Remove the pan from the oven and immediately press a mini peanut butter cup into the center of each cookie. Let the cookies cool completely in the pan before carefully removing.
