Whether it’s raining or sunny outside, some afternoons are best spent curled up with a blanket and your favourite book. This Earl Grey Loaf is the perfect treat for the occasion; it’s moist, bergamont-y, and just as comforting as a cup of tea.

Heat your oven to 325°F, then grease or line a 9×5-inch loaf pan with parchment.
Warm the milk on the stove, being careful not to bring it to a boil. Turn off the heat and steep 2 Earl Grey tea bags in the milk for 15 minutes.
In a mixing bowl, beat together the Mirage Margarine, honey, and sugar until well combined. Add the eggs, one at a time, mixing well after each addition.
In a separate bowl, whisk the flour, salt, and baking powder together, then add to the wet ingredients and mix just until the dry ingredients are incorporated.
Stir in the tea-infused milk, lemon zest, and the dry tea leaves from the remaining 2 bags. Mix until the batter is smooth.
Transfer the batter to the greased or lined loaf pan and bake for about 1 hour, or until a toothpick inserted in the centre comes out clean.
Glaze
In a small bowl, whisk together the powdered icing sugar and lemon juice until smooth. Add the sour cream and whisk until fully combined. If the glaze is too thin, add more powdered sugar 1 tbsp. at a time, whisking after each addition until you reach your desired consistency.
Pour the glaze over the cooled cake and let stand for 10 minutes to set. Slice and serve.
