Ingredients

Vanilla Cake

  • 1/2 cup Mirage Margarine
  • 1 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 3/4 cup All Purpose Flour
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Cup Milk

Assembly

  • 16 oz Canned Frosting
  • 3 cups Candy Melts
  • 1/2 cup Cake Fondant

Directions

Vanilla Cake

Preheat oven to 350°F. In a stand mixer fitted with a paddle attachment, cream Mirage and sugar together until light and fluffy. Beat in eggs one at a time, beat in vanilla. Sift together the flour, baking powder, and salt. With mixer running on low-speed alternate adding about 1/3rd of the flour mixture and 1/3 of the milk at a time. Divide the batter between two greased 8” cake pans. Bake at 350°F for 25-30 minutes or until a toothpick inserted comes out clean. Remove from oven and let rest until cool enough to handle. Remove cakes from pan and let cool completely.

Assembly

Crumble the cakes and place in the bowl of a stand mixer fitted with a paddle attachment. Add the frosting and beat on medium speed until well combined. To form the snowmen, roll about 2 tbsp of cake mixture into a ball and place on a parchment lined sheet pan. Roll a second slightly smaller ball and place on top of the first ball. Repeat this process until all of the cake mixture is used. Place rolled cake in the fridge for about an hour to firm up.

Melt candy melts in a small heat proof bowl set over a pot of simmering water if you do not have a double boiler. Stir constantly. Transfer the melted candy melts to a tall narrow measuring cup. A glass 2 cup measuring cup works well here. Dip the tip of the cake pop skewer into the melted candy melts and press into the top of your snowman.

Chefs tip! Dipping the skewer into the candy melts prior to skewering helps prevent the cake from slipping off of the skewer. Carefully dunk the cake pop into the melted cady melts and let the excess drip off. Place cake pop standing up on a parchment lined sheet pan, repeat with remaining cake pops.

To decorate your snowmen use candy sprinkles for eyes and buttons, attach them to the snowmen with a small dab of melted candy melt applied with a toothpick.

Chefs tip! We dressed our snowmen up in cozy scarves by kneading a drop of red gel colour into a gold ball sized piece of fondant, rolling it out and cutting it into strips. We also rolled small pieces of orange coloured fondant into tiny carrot noses!
