These Peppermint Sugar Cookies are the perfect holiday treat, bursting with the refreshing flavor of peppermint and the rich, buttery goodness of Mirage Margarine. Ingredients
- 1 cup Mirage Margarine
- 1 1/4 cups Granulated Sugar
- 1 Egg
- 1 tbsp Vanilla Extract
- 1 tsp Peppermint Extract
- 2 1/2 cups All-Purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
Toppings
- 1/4 cup Granulated Sugar
- 1/4 cup Crushed Peppermint Candy Cane
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl with a stand mixer or hand mixer, cream the margarine and sugar together until light and fluffy, about 1 minute.
- Add in the egg, vanilla extract, and peppermint extract until combined.
- In a separate medium bowl whisk together the flour, baking soda, baking powder, and salt. Add into the margarine mixture and mix just until combined.
- In a small bowl mix the topping ingredients.
- Roll cookie dough into 1″ balls, and roll in topping mixture to coat.
- Place on the baking sheet, about 2″ apart. Bake for 10 minutes, or until cookies are just starting to crackle. Enjoy!
