These Peppermint Sugar Cookies are the perfect holiday treat, bursting with the refreshing flavor of peppermint and the rich, buttery goodness of Mirage Margarine. Ingredients

  • 1 cup Mirage Margarine
  • 1 1/4 cups Granulated Sugar
  • 1 Egg
  • 1 tbsp Vanilla Extract
  • 1 tsp Peppermint Extract
  • 2 1/2 cups All-Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt

Toppings

  • 1/4 cup Granulated Sugar
  • 1/4 cup Crushed Peppermint Candy Cane

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl with a stand mixer or hand mixer, cream the margarine and sugar together until light and fluffy, about 1 minute.
  3. Add in the egg, vanilla extract, and peppermint extract until combined.
  4. In a separate medium bowl whisk together the flour, baking soda, baking powder, and salt. Add into the margarine mixture and mix just until combined.
  5. In a small bowl mix the topping ingredients.
  6. Roll cookie dough into 1″ balls, and roll in topping mixture to coat.
  7. Place on the baking sheet, about 2″ apart. Bake for 10 minutes, or until cookies are just starting to crackle. Enjoy!
