Serves: 12-18 slices

Ingredients

Batter

  • 1/2 cup Mirage Margarine
  • 3/4 cup White Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1 1/2 cup All Purpose Flour
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2/3 cup Sour Cream

Cinnamon Apple Crumble

  • 1/4 cup Mirage Margarine
  • 2/3 cup Brown Sugar
  • 3/4 cup All Purpose Flour
  • 2 tsp Ground Cinnamon
  • 2 cups Green Apples, peeled, diced

Caramel Glaze

  • 1/3 cup Brown Sugar
  • 1/3 cup Icing Sugar
  • 1 tbsp Mirage Margarine
  • 1 1/2 tsp Water
  • 1/4 tsp Ground Cinnamon

Directions

Batter

In a mixer with a paddle attachment, cream together Mirage and sugar until light and fluffy. Add in vanilla and beat in eggs one at a time. In a separate bowl, sift together flour, baking powder, and salt. With mixer on low alternate adding sour cream and flour mixture until batter is just smooth.

Cinnamon Apple Crumble

In a bowl mix together Mirage, brown sugar, flour, and cinnamon using your hands until a sandy mixture is formed. Add the diced apples and toss well to combine.

Assembly

Line the bottom of a 9” spring form pan with parchment paper. Spread ½ the batter into the bottom of the pan. The batter will be quite thick, we recommend spreading with a pallet knife to coat the bottom of the pan. Sprinkle half of the cinnamon apple crumble over the batter. Spread the other half of the batter over the crumble. Drop the batter in dollops and spread with a pallet knife. Top with the remaining crumble.

Bake at 350°F for 60 minutes or until a toothpick inserted comes out clean. Remove the ring from the cake pan and let cool slightly.

Glaze

Combine Mirage, brown sugar, and water in a small bowl. Microwave for about 20 seconds to soften the brown sugar and melt the butter. Mix well to combine, add the icing sugar and cinnamon. Stir to form a glaze. Drizzle the glaze over the cake.
